Most ancient building was in mudbrick and timber. Almost none of it survives. What survives is stone and fired brick, which were used for temples, tombs and monumental public works — so the impression a visitor forms from ruins is systematically skewed toward the exceptional.
The bias is worth stating plainly because it structures whole fields. Egyptian tombs and temples were stone on the desert edge and survive; Egyptian cities were mudbrick on the floodplain and have largely dissolved. Mesopotamia had no building stone at all, which is why its monuments are brick and their decoration is glazed rather than carved.
Marble is a special case. It was quarried at named sources — Pentelic for Athens, Carrara and a range of coloured stones from across the empire for Rome — and moved at enormous cost. Roman use of coloured marbles from distant provinces was itself a statement about the reach of the empire.
What the evidence supports
The proportion of ancient building in perishable materials cannot be quantified.
Mudbrick and timber dominated and survive least, so the survival bias is certain in direction and unmeasurable in size. Any statement about what ancient cities mostly looked like is an inference from a skewed sample.

Attested wherever waterlogging or burial has preserved it, and inferable from the absence of stone at ordinary sites.
Mesopotamian architecture is brick because there is no local stone.
A straightforward consequence of the alluvial geology, and the reason glazed brick decoration developed there.

Isotopic and petrographic analysis can assign marble to a quarry, which allows the movement of stone across the empire to be traced.

The standard imperial urban fabric: concrete core with a brick face, stamped bricks sometimes dating the construction to the year. Standing throughout the excavated town, with stamped bricks often dating the work.
Archaeology
Stamped bricks are among the most useful dating tools in Roman archaeology, since the stamps often name the estate and the consuls of the year. Marble provenancing by isotopic analysis has transformed the study of ancient trade in stone.
